Why, howdy there 'Hoppers! Been a while since we actually put together a Fermentation Friday article, right? We've been running around like a bunch of sugar-crazed ants lately trying to put the finishing touches our brewery & taproom buildout. We hope you had a wonderful & non-stressful holiday season. For us, it's been a blast staying so busy, especially following the hectic holiday schedule our team had.
...and speaking of our team - we're psyched to welcome Liz K. to Tallahassee! A longtime friend, Liz comes to GrassLands/Tallahassee from ActionJacksonville and will be working alongside Andrew P. as our head beerslingers in GrassLands' taproom! Woooot! We're psyched that our team has come together so quickly and efficiently and we're happy about the potential of expanding the Hopper staff. Keep an eye out for opportunities as they develop.
So what's next? Well, we're glad you asked. As the final installations get...well, finalized, we look toward the good people working at the City of Tallahassee to grant us the ability to officially open our doors and serve you beer & sell you some GBC swag, should you decide to engage some beer-fashionable senses! While we'd love to already have had our brewing license, that's likely going to be a reality come this spring, when the Feds give their approval. Then, my dear readers, it's full-speed ahead brewing on our pilot system. All the way until our production 15-barrel system arrives from sunny California, that is! We're extremely excited about the potential of our business to live up to our company philosophy: brewing innovative & high quality ales for your enjoyment, while minimizing our carbon footprint as much as possible. With that said, we're busy planning out a realistic launch timeline. Since this is a first-go entrepreneurial venture for most of us (not including Scott), we want to ease on that ol' gas pedal prior to a grand opening. We don't have the luxury of a month's worth of soft-launch patience like our buddies at Madison Social, but we do want to host specific, invite-only soft openings before going bonkers with a grand opening. That schedule, as I said, is about ready to be finished. Just a few more things need to fall (or be installed) into place before then. Inspections upcoming, we're eager to get going (understatement of the past 4 years, right?).
Without having the opportunity over the holidays to say it, we want to (re)communicate it again - we couldn't have done any of this without you. We're merely weeks away from becoming official and it's largely because of your ongoing support, enthusiasm, advice, and also...patience. Four years is a long, long time for a dream to become a reality, but here we finally are and we are so thankful for all of you, our dear readers. We will forever be thankful for you.
